
Valval Recipe (Mixed Vegetables In Coconut Milk) Karwar style

The Karwar-Style Valval Recipe (Mixed Vegetables with Coconut Milk) is a delicious creamy mixed vegetable curry cooked in coconut milk and coconut oil which gives it a rich flavor. Serve the curry with lachha paratha and beetroot pachadi for a complete meal.

Cooking time: 20 minutes
Ingredients:
1 cup chopped Green beans (French Beans);
1 Carrot (Gajjar) - chopped in small cubes;
1/2 Green peas (Matar);
1 Potato (Aloo) - chopped into small cubes;
1/2 Mangalorean cucumber - chopped into small cubes;
1 cup slit pointed gourd (Parval);
5 slit Green Chillies;
3 cups Coconut milk
For tempering:
1/2 tsp. Mustard seeds (Rai/ Kadugu)
1-1/2 tsp. Cumin seeds (Jeera)
2 Dry Red Chilli
1 tbsp. Coconut Oil
6 Curry leaves
How to cook?
To start preparing the Karwar-style Valval recipe (mixed vegetables with coconut milk), boil all the vegetables - beans, carrots, peas, potatoes, mangalore cucumbers, parval and green chillies in water. They should be cooked, but not soft, so don't pressure cook them.
Add the coconut milk, salt and cook for another 5 to 6 minutes. Take it off the heat.
The next step is tempering. Heat a little coconut oil in a heavy-bottomed pan. Add the mustard and cumin seeds. When they start to crackle, add the red chillies and curry leaves.
Pour the prepared tempering in gravy and mix it well.
Serve the curry with lachha paratha and beetroot pachadi for a complete meal.
