Sweet Corn curry

Sweet corn is very popular with us and in all its forms, especially on the cob of corn (butta) grilled on charcoal with a pinch of salt, chili powder and lemon juice. I personally love the creamy corn with noodles or corn fritters. My second favorite in corn items is curry form with roti or flavored rice. With piles of fresh corn on the cob in my fridge, thanks to my dear wife, we went on a sweet corn marathon for a few days. Bread pizza with sweet corn, steamed corn on the cob, vegetables au gratin with corn as the protagonist, corn vadas with lots of coriander and sweet corn curry to combine with pea pulao.

Preparation time: 15 minutes

Cooking time: 40 minutes

Serves: 4


2 cups of Sweet corn kernels;

1 Capsicum chopped into small pieces (optional);

1 finely chopped large Onion;

2 Green Chillies slit;

1 tsp. Ginger Garlic paste;

1 tsp. Kasuri Methi crushed lightly;

1/4 tsp. Turmeric powder;

1 tsp. Red Chilli powder;

1 1/2 tsp. Coriander powder;

1/4 tsp. Garam masala powder;

2 finely chopped Tomatoes;

5 Cashew nuts - soak it in 3tbsp milk and make a smooth paste;

1 tbsp. Fresh Cream;

2 tbsp. finely chopped Coriander leaves;

Salt as per taste

11/2 tbsp. Oil.

How to cook?

  1. Heat the oil in a vessel. Once hot, add the onions and sauté until translucent. Add green chilies and ginger garlic paste and sauté for about 3 minutes over medium-low heat. Add capsicum and sauté for about 5 minutes.

  2. Add kasuri methi and sauté for 2 minutes. Add turmeric powder, red chili powder, coriander powder, cumin powder and salt. Mix it well.

  3. Add the tomatoes and sauté until the oil separates. Add the corn and mix. Cover and cook for 4 minutes. Add half of the coriander leaves and 1 1/2 cups of water and bring to a boil.

  4. Cover and lower the heat and cook for 15-18 minutes. Add garam masala powder, cashew paste and mix. Cook for 2 minutes. Add the fresh cream and stir continuously for one minute over low heat. To put out the fire.

  5. Add the curry in a serving bowl and garnish with fresh coriander leaves and serve with roti, naan or flavored rice.
