Spoiled milk recipe

One of the simple and convenient recipes to have in the kitchen pantry using curd from spoiled milk. When milk is curdled or spoiled it is usually thrown away thinking it is no use, but it is a great source of protein and nutrients. In practice, a tasty and healthy recipe for breakfast, snack and dessert using chenna from sour milk.


Preparation time: 10 minutes

Cooking time: 15 minutes

Serves: 3


Ingredients:


for wheat dosa:

2 cup spoiled milk;

1 cup wheat flour;

¼ cup rava / semolina / suji (coarse);

½ tsp salt;

½ cup water;

½ finely chopped capsicum;

1 grated carrot;

2 tbsp finely chopped coriander;

2 finely chopped chilli;

¼ tsp turmeric;

1 tsp cumin;

Oil - for roasting.


for crispy pakoda:

2 cup spoiled milk;

1 cup maida;

¼ cup rice flour;

1 tsp cumin;

2 tbsp finely chopped onion;

2 tbsp finely chopped coriander;

2 finely chopped chilli;

¼ tsp baking soda;

½ tsp salt;

Oil - for frying.


for milk peda:

3 cup spoiled milk;

1 cup unsweetened milk powder;

¾ cup condensed milk / milkmaid;

¼ tsp cardamom powder;

¼ tsp saffron food colour.


How to cook?


Wheat dosa using spoiled milk

  • In a large bowl take 2 cup of spoiled milk.

  • Add wheat flour, rava and salt. Mix it to combine well.

  • Then, add water. Whisk it well forming a smooth batter.

  • Add capsicum, carrot, coriander, chilli, turmeric and cumin. Mix it well.

  • Heat the tawa and pour the batter. Spread it slightly.

  • Spread some oil on top of dosa. Simmer the flame and cover it for 1 minute.

  • Now flip over and let it cook.

  • Enjoy it with chutney,


Crispy pakoda using spoiled milk:

  • In a large bowl take 2 cup of spoiled milk.

  • Add maida, rice flour and cumin.

  • Now, add onion, coriander, chilli, baking soda and salt. Mix it well. Make sure it is well combined.

  • Next, dip your hand in water, and drop ball sized batter in hot oil.

  • Fry it keeping the flame on medium until the pakoda turns golden brown and crisp. Place pakoda on kitchen towel draining excess oil.

  • Enjoy crispy pakoda with chutney.


Milk peda using spoiled milk:

  • Strain 3 cups of spoiled milk in order to collect paneer from the milk.

  • Add paneer into large kadai. Mash it smooth keeping it on low flame.

  • Add milk powder, condensed milk and mix it well.

  • Cook till the mixture starts to seperate the pan.

  • Add cardamom powder and saffron food color. Mix it well till it starts to get in shape.

  • Cool the mixture and shape it as per thr design of your choice.

  • Enjoy milk peda. You can store it in an airtight container for a week in the refrigerator.
