Upma recipes are the most common in many South Indian households and are mostly made in breakfast. Normally made in semolina, upma is now extended to other ingredients like vermicelli, oats, bread and even millets. Out of this bambino or MTR vermicelli recipe is also popular.
Preparation time: 5 minutes
Cooking time: 10 minutes
To cook Vermicelli:
1 cup Vermicelli, Semiya;
2 tsp. Oil;
Water as required;
½ tsp. Salt;
3 tsp. Oil;
1 tsp. Mustard;
½ tsp. Urad Dal;
1 tsp Chana Dal;
1 dried Red chilli;
Few Curry leaves;
1 inch Ginger chopped finely;
2 slit green chillies;
1 medium Onion, chopped finely;
½ tsp. Haldi;
2 tbsp. Mutter, Green Peas;
2 tbsp. Carrot, chopped finely;
2 tbsp. Capsicum, chopped finely;
2 tbsp. Beans, chopped finely;
How to cook?
In Kadai, heat 3 tsp. Oil.
Add mustard seeds, urad dal, chana dal, dried red chilli and few curry leaves.
Now, add peanuts and roast till it gets crunchy on a low flame.
Add ginger, green chillies. Saute well.
Add onion. Saute till it turns golden brown.
Add peas, carrot, capsicum, beans. Saute for 2-3 minutes.
Add turmeric and salt. Saute for a minute.
Cover and cook for 2 minutes or till vegetables turn soft.
Add cooked Semiya and mix it gently. Do not over mix or Semiya will get smashed.
Now add Coriander and ½ lemon. Mix it well.
Serve it with hot masala chai.
