Ragi Malt Recipe


A healthy and delicious recipe of porridge, finger millet or well known as ragi is a healthy and nutritious drink with high protein content and rich in minerals served to babies and diabetics. It's a popular drink in southern India but is now also served as a drink in many parts of India.


In this recipe, I've shared a sweeter version of ragi malt with jaggery and milk that makes it a refreshing drink. But there are many other versions of the ragi porridge recipe as well. One of the most popular variants is the salty variant with salt and some spices such as pepper. Also, it is sometimes mixed with buttermilk or even thick curd. This recipe is also known as Amli or Ragi Ambli recipe. But with this post I'm just dedicating it to a sweeter version and maybe I'll share the later version. Also, I have shared a thicker version in this recipe where it can also be made with a thinner version if you plan to serve it to guests.


Preparation time: 2 minutes

Cooking time: 10 minutes

Serves: 2


Ingredients:

4 tbsp. ragi flour;

3 cups water;

2 tsp. jaggery;

1 cup milk;

0.5 tsp cardamom powder(elachi powder).


How to prepare?

  • In a small cup add ragi flour. Dissolve it in water. Make sure no lumps are formed. Set it aside.

  • Now take a saucepan and boil water.

  • Once water starts to boil add dissolved ragi flour.

  • Keep stirring it on a medium flame. The mixture starts to thicken after 5 minutes and gradually becomes glossy after 9 minutes.

  • Add jaggery. If you are serving it to a diabetic skip this step.

  • Stir till the jaggery dissolves completely.

  • Then add cardamom powder and mix well.

  • Finally serve it hot. You may add more jaggery if its required.
