Potato Chilly


A unique street food combination recipe made from deep fried crispy potatoes with a hot chili sauce. Basically a fusion recipe for crispy finger chips mixed in a spicy Indo-chinese chili sauce. It can be a popular party starter or even an appetizer recipe that can also be served as a side dish to most Indo-Chinese rice and noodle recipes.


Chilli and Manchurian recipes are very popular dishes of popular Indo-Chinese cuisine, but they are usually made with gobi, paneer, or any meat based that offers a combination of crunchy and crisp flavors. It can also be made using other vegetables on of which the popular choice is the low-starch potato, known for its crunchy and creamy flavor.


Preparation time: 5 minutes

Cooking time: 15 minutes

Serves: 3


Ingredients:

For Boiling:

Water;

1 tsp Salt;

2 Potatoes (wedge);


For Crispy Potato:

1/4 tsp. Turmeric powder;

1/2 tsp. Chilli powder;

1/4 Salt;

2 tbsp. Maida;

2 tbsp. Corn flour;

Water for batter;

Oil for frying.


For Sauce:

2 tbsp. Oil;

3 sliced Garlic;

1 inch chopped Ginger;

2 tbsp. chopped Spring Onions;

1/2 Onion petals;

1/2 chopped Capsicum;

2 tbsp. Tomato Sauce;

2 tbsp. Vinegar;

2 tbsp. Soy sauce;

1/4 tsp. Chilli powder;

1/4 Salt;

1/4 tsp. Pepper powder;

1 tsp. Corn flour;

1/2 cup Water;

2 tbsp. chopped Spring Onions.


How to prepare?

Let's boil and fry potatoes first:

  • In a large vessel add water and 1 tsp. salt.

  • Once the water starts to boil add potatoes.

  • Boil it for 2 minutes and drain off the water.

  • Now add turmeric, chilli powder and salt. Mix it well and make sure all spices are combined.

  • Add maida, cornflour and water.

  • Mix well. Add water as required forming a smooth batter.

  • Deep fry in oil on a medium flame.

  • Keep stirring occasionally and fry until its crisp golden brown.

  • Drain excess oil using paper towel and keep it aside.


Lets make sauce and serve this dish:

  • In a large wok or pan, add oil, garlic, ginger and spring onions. Stir it well.

  • Now add onion petals and capsicum. Stir it.

  • Add tomato sauce, vinegar, soy sauce, chilli powder, salt and pepper powder.

  • Stir it on high flame till sauces are combined.

  • Add corn flour slurry. To make slurry add corn flour in 1/2 cup water.

  • Cook till slurry turns glossy.

  • Add fried potatoes and spring onions and mix it gently on high flame.

  • Top it with roasted sesame and serve hot.
