A gravy made from coconut and dried red chilli which is then seasoned with garlic and contains vegetables like drumsticks and mangalore cucumber. Koddel is basically a coconut and dry red chilli gravy seasoned with a good amount of garlic. Serve with steamed rice and roasted chicken on the side.
Drumstick pods help build strong bones, they are also very good for pregnant women. Drumstick pods, called Moringa in the local language, are rich in calcium, iron and vitamins, and have properties such as blood-purifying, helps improve digestion and protect against infection.
Preparation time: 20 minutes
Cooking time: 30 minutes
1 Drumstick, cut into 1 inch;
1 Mangalorean cucumber cut into small pieces along with the skin;
1 cup Tamarind Water;
1 tsp. Red Chilli powder;
1 tsp. Turmeric powder;
1 tbsp. Jaggery;
4 cloves roughly chopped Garlic;
Salt as per taste.
Masala required to roast and grind:
5 Dry Red Chillies;
1 tbsp. Coriander Seeds;
1/2 cup Fresh coconut;
How to cook?
First, we will start roasting the ingredients to be ground in masala as per ingredients mentioned "Masala required to roast and grind."
Roast the red chillies and coriander seeds in a small pan, grind them together with the coconut and mixing a little water to form a smooth paste.
Heat a pressure cooker with oil, add some crushed garlic and fry for 10 seconds. Add the Mangalore cucumber and drumsticks and tamarind water.
Add the ground masala mixture, jaggery, chili powder, and salt, and about 1/2 cup of water. Cover the pressure cooker and let it cook for 2-3 whistles.
When done, turn off the heat and naturally release the pressure, check and adjust the salt and seasonings to your liking and serve hot.
Serve the Maskasangi Magge Koddel with Steamed Rice or the Mangalorean Neer Dosa and Chettinad pepper dry chicken.
