Kathal (Jackfruit) Biryani

We all know the story of Biriyani and its love for the types of meat used in cooking. However, there are many alternatives to this popular dish, made from various vegetables and vegetarian ingredients. However, there are several meat biryani substitutes, and the jackfruit biryani recipe is a simple and easy substitute for lamb biryani.

Well, to start with, I am a big fan of biriyani, we eat both vegetarian and non vegetarian biryani once or twice a month. This prompted us to explore more types of vegetarian Biryani options, the latest addition is Kathal Biriani which is a perfect alternative to mutton biryani. The tender jackfruit wedges are surprisingly similar to the meat variants. I strongly recommend you to give it a try, especially if you are a meat eater and like to explore some meat alternatives.

Cooking time: 1 hour

Serves: 4


1 cup Curd;

1 tsp. Ginger Garlic paste;

1/4 tsp. Turmeric;

1 tsp. Chilli powder;

3 tbsp. Biryani masala;

1/2 tsp. Salt;

2 tsp. Lemon juice;

2 tsp. Oil;

3 tbsp. chopped Coriander;

3 tbsp. chopped Mint;

12 pieces of raw Jackfruit;

1 chopped Carrot;

1 chopped Potato;

5 chopped beans;

2 tbsp. Onions fried.

To make biryani rice:

2 cup Basmati rice;

1 tsp. Cumin;

2 star anise;

2 bay leaf;

1/2 tsp. Cloves;

4 Cardamom;

2 tsp. Lemon juice;

2 chilli;

1 tbsp. Salt.

For Biryani gravy:

2 tbsp. Ghee;

2 tbsp. Oil;

1 Bay leaf;

1 inch Cinnamon;

1 black Cardamom;

1/2 tsp. Cloves;

4 Cardamom;

1 Star anise;

1 tsp. Cumin;

2 finely chopped Onion;

1 tsp. Ginger Garlic paste;

8 cubes Capsicum.

Other ingredients:

2 tbsp. Saffron Milk;

2 tbsp. chopped Coriander;

2 tbsp. Chopped Mint;

1 tsp. Biryani masala;

2 tbsp. Ghee.

How to cook?

Let's marinate vegetables for biryani:

  • In a large bowl add i cup curd. The curd must be thick and slight sour.

  • Add 1 tsp. Ginger garlic paste, 1/4 tsp. turmeric, 1 tsp. chilli powder, 3 tbsp. biryani masala and 1/2 salt. Since biryani masala has salt in it already, hence I have added 1/2 tsp. salt.

  • Add 2 tsp. lemon juice, 2 tsp. oil, 3 tbsp. Coriander and 3 tbsp. mint.

  • Mix it well to combine all the spices.

  • Add 12 pieces of jackfruit, 1 carrot, 1 potato, 5 beans and 2 tbsp. fried onions.

  • Mix it well till all the vegetables are coated.

  • Cover and rest for 30 minutes.

Now let's cook biryani rice:

  • Rinse and soak basmati rice for about 20 minutes.

  • In a large vessel add enough water and add spices.

  • Add 2 tsp. lemon juice, 2 chilli and 1 tbsp. Salt.

  • Mix it well and bring it to boil.

  • Boil for about 2 minutes or till the rice is almost cooked.

  • Biryani rice is ready.

Let's make kathal biryani:

  • In a large kadai, heat 2 tbsp. ghee and 2 tbsp. Oil.

  • Add 1 bay leaf, 1 inch cinnamon, 1 black cardamom, 1/2 tsp. cloves, 4 cardamom, 1 star anise and 1 tsp. Cumin.

  • Saute till the spices turn aromatic.

  • Add 2 onions, 1 tsp. ginger garlic paste and saute till onions turn golden brown.

  • Add 8 cubes of capsicum and saute it for about 2-3 minutes.

  • Add marinated vegetables and cook it for about 2-3 minutes.

  • Cover and let it cook for 10 minutes or till the vegetables are almost cooked.

  • NOw spread the vegetables forming a layer.

  • Add cooked basmati rice and spread it.

  • Top with saffron milk, 2 tbsp. Coriander, 2 tbsp. mint, 1 tsp. Biryani masala and 2 tbsp. ghee.

  • Cover and simmer it for about 30 minutes. Make sure to seal the hole to prevent steam escape.

  • Enjoy biryani kathal with raita.
