
Kashmiri noon Chai (Pink tea)

Recipe info:
Originating from the land of Kashmir, this tea is pink in colour and has tastes different from other regular tea. Kashmiris consume this tea 2-3 times in a day on a regular basis. This tea is cooked in Kashmiri samovar made with tea leaves, milk and salt perfect in cold winters.
Preparation time: 10 minutes
Cooking time: 10 minutes
Serves: 4
Ingredients:
2 tsp. Long leaf green tea;
1/3 tsp. Baking soda;
1/2 tsp. Salt;
2 Cardamom seeds crushed;
2 cups Water;
2 cups Milk.
How to prepare?
First boil 1 cup of water and brew the tea leaves till its bubbly.
Add baking soda and whisk it for about 10 seconds.
Add remaining water and cardamom powder. Brew it till the colour turns bright red.
On a medium heat, add milk and whisk to achieve slight froth. The colour would change to light pink.
Adjust milk as required. Add salt and whisk it well.
Pour in a cup and serve hot.
For garnishing you can add grounded pistachios and almonds.
