No one will believe that these Veg Hariyali Kebabs aren't deep fried. Crunchy from outside and soft from inside, these Indian vegetarian kebabs make an excellent appetizer for any occasion. Let me show you how easy it's to cook these Veg Hariyali Kebabs with step by step instructions.

Ingredients

  • 1 cup boiled peas;

  • 1 cup boiled potatoes, grated;

  • ½ cup paneer, grated;

  • 1 tsp. veg oil;

  • ½ tsp. dry mango powder (amchoor);

  • 2 tsp. fennel seeds (sauf);

  • Handful of finely chopped mint leaves;

  • ½ tsp. Green chili paste;

  • 1 tsp. Grated ginger;

  • ½ tsp. crushed Kasoori Methi (optional);

  • Salt as per taste;

  • Black pepper as required.


For coating

  • ¼ cup or more corn flour (for rolling);

  • 2 tbsp. Flaxseed meal plus;

  • 9 tbsp. Warm water;

  • 3-4 slices of grounded bread;

  • ½ cup Bread crumbs

 

How to prepare?

  1. Pat dry boiled peas and grind them.

  2. Heat oil in a pan on a medium heat. Add fennel seeds and cook it for 15 seconds.

  3. Add ginger and chilli paste and cook it for 5 seconds.

  4. Add dry mango powder, salt, pepper, grated potato, grated Paneer and mix well till the mixture is coated well with the spices. Switch off the flame.

  5. Add kasuri methi and mint leaves and mix it well. Let it cool down before making lime size balls.

  6. Prepare kebab for cooking.

  7. Place corn flour, flax seed meal slurry (add warm water and flax meal together and let it stand for a minute), bread crumbs and panko crumbs in 3 separate bowls.

  8. Now take one kebab and roll it on flour. Dip it in slurry and coat well. Dunk it in bread crumbs and roll it well. Repeat the same with all kebabs.

  9. Heat up Appe Pan on a medium heat. Brush the cavity. Add the kebabs and brush them with oil. Cook them till it turns golden brown. Rotate and flip them at regular intervals with spoon or skewer.

  10. Serve it with Chutney or sauce.

If flax seeds are not available then you can use all-purpose flour.
