Green Moong Dal Soup or Mung Bean Soup is a healthy diabetic recipe with high protein content and easy digestion. Soup is usually used as an appetizer for any meal, but this lovely soup is perfect for pairing with delicious Indian dishes. Green Moong or Whole Moong Dal is the best because it has high protein content and low carbohydrate content. It has a low glycaemic index and high fiber content, making it an ideal soup for diabetics because it slowly releases sugar into the blood.
Preparation time: 5 minutes
Cooking time: 15 minutes
1/4 cup of whole green moong dal;
1 green chilli
1 tsp. Jeera (cumin seeds);
Pinch of Asafoetida;
6 crushed black peppercorns;
1 tsp. Lemon juice;
Salt as per taste;
1 tsp. Oil.
How to prepare?
First, was and soak the green mong dal for 4 hours or overnight.
Then add it to pressure cooker for about 3 whistles and mash it to a puree with blender.
Heat oil in a pan and add cumin seeds. Once they start to sizzle, add asafoetida and saute it for a minute.
Pour in the mashed dal and let it boil on a low flame for about 5-6 minutes. Switch off the flame.
Add lemon juice and garnish it with coriander leaves. Serve hot.
