Egg Samosa

Stuffed with masala mixture of carrots, potatoes and eggs, this recipe makes your snack more delicious as its crispy from outside and soft from inside. Egg samosa is a perfect dish served at any occasions as side dish.

Serves: 3


6 eggs;

1 cup potatoes grated;

3 Green chilies, finely chopped;

1/2 tsp. Baking soda;

Salt - as per taste;

4 Onions, chopped finely;

1/2 tsp. Onion seeds;

Coriander leaves - a bunch;

300 gms. All purpose flour (Maida);

2 cups Refined oil.

How to prepare?

  1. In a bowl, combine all purpose flour, baking powder and salt. Add onion seeds and oil. Knead until smooth dough. Let it rest for 1-2 hours.

  2. Heat the oil into a pan and add onions and green peppers. Sauté it will until the onions become golden pink. Later add potatoes and carrots. Stir fry for 2-3 minutes.

  3. Add salt and coriander leaves. Cover and cook for 5-7 minutes or until potatoes are tender and mushy.

  4. Now crack the eggs into the pan and cook until the eggs are cooked. Remove from heat and let cool.

  5. Form balls of dough and roll them into small thin chapatis.

  6. Put the egg mixture and form medium/small triangles. Seal the edges with a little water.

  7. Fry prepared samosas in small batches until golden brown. Remove and drain excess oil.

  8. Serve hot with ketchup, onion rings and chutney of your choice.
