Recipe Info:

Eggs are a great source of protein. Egg masala curry is a very flavourful Punjabi curry recipe. This curry is a versatile dish which can be eaten for both lunch and dinner and is a perfect protein rich dish to add in your everyday meal.

 

Preparation time: 10 minutes

Cooking time: 35 minutes

 

Ingredients:

1 tbsp ghee;

1 tsp. Oil ;

6 boiled eggs;

2 finely chopped Onions;

4 tomatoes blended to puree;

1 inch ginger cut finely;

2 slit green chillies;

1/2 turmeric powder;

Salt as per taste;

1 tsp. Black pepper powder;

1 tsp. Garam masala;

2 tsp. Coriander powder;

1 tsp. Cumin powder;

1 tsp. Red chilli powder;

3-4 Coriander leaves;

1 tsp. Kasoori methi.

 

How to cook?

  • Slit the boiled eggs with knife and add 1tsp. oil and sprinkle turmeric and salt.

  • Stir the outer layer of eggs gently by cooking them from all side making it crispy.

  • In another pan add ghee and then add chopped onions. Sauté till it turns light brown.

  • When onions are cooked add tomato puree and cook for 5 minutes.

  • Cook till tomatoes are cooked and ghee starts to separate which will take 10 minutes.

  • Then add turmeric, red chilli, coriander, salt, cumin, black pepper powder and garam masala.

  • Add boiled eggs and cook for few minutes. Garnish with fresh coriander and serve.
