Perhaps one of the innovative fusion recipes made from noodle bowls and Indian spice mixture. This is not only delicious, but it is also a simple and light snack that can be prepared in a few minutes, because it does not require any effort to prepare the pasta shells. There are many ways to make this appetizer, but I am trying to introduce the two most popular pasta appetizer shapes.

Ever since PepsiCo launched this recipe, it has been a popular snack recipe in India. It was originally introduced only with rice flour, but many other ingredients and flours have been adapted and tried. This innovative Kurkure pasta recipe is known for its crispy and crunchy texture. This recipe is adopted from a famous chef and a food blogger Archana Hebbar.

Preparation time: 10 minutes

Cooking time: 30 minutes

Serves: 4 cups


For Crispy Flavour:

Water as required

2 tsp. Salt;

4 tsp Oil;

4 cup Macaroni pasta;

0.5 cup Maida;

1 cup Corn flour;

Oil - For frying.

For tandoor flavour:

1 tsp. Chilli powder;

1/2 tsp. Cumin powder;

1/2 tsp. Coriander powder;

1/2 tsp. Garam masala;

1 tsp. Crushed Kasuri methi;

Salt as per taste.

For chatpatta flavour:

1 tsp. Chat Masala;

1/4 tsp. Pepper powder

Salt as required.

How to prepare?

  • In a large vessel take enough water.

  • Add 1 tsp. Salt and 2 tsp. Oil. Bring it to boil.

  • Add 2 cup macaroni pasta. You can also use shapes of your choice.

  • Boil it for 6-7 minutes or as mentioned in pack.

  • Once pasta turns al dente, drain the water off.

  • Rinse it with cold water to avoid overcooking.

  • Take a large bowl and add boiled pasta. Now add 1/4 cup Maida and 1/4 cup Cornflour and mix it well. Add more corn flour if required.

  • Deep fry it by keeping it on a low flame.

  • Keep stirring and fry till pasta turns golden brown. It normally takes 15 minutes to get crispy.

  • Place it on a dry kitchen towel to remove excess oil.

Let's make tandoor flavoured kurkure:

  • Take fried pasta in a bowl and add 1tsp. Chilli powder, 1/2 tsp. Cumin powder, 1/2 tsp. Coriander powder, 1/2 tsp. Garam masala, 1 tsp. Kasuri methi and salt as required.

  • Mix it well and make sure all spices are coated.

  • Serve it with masala chai.

Let's make chatpatta flavoured kurkure:

  • Take fried pasta in a large bowl. Add 1 tsp. Chat masala, 1/4 pepper powder and salt as required.

  • Mix it well and make sure all spices are coated.

  • Serve it with masala chai.
