Homemade pudding at home have now been to some extent been forgotten ad I have no idea why? Making pudding from start is simple and satisfying. A little effort from your end and you will have a smooth, rich and creamy pudding. A perfect dessert for guests at dinner or a treat to your little one putting a smile on his lovely face.
Preparation time: 2 hours 5 minutes
1/2 cup Granulated sugar;
1/4 cup unsweetened cocoa powder;
2 tbsp. Corn starch;
1/2 tsp. Kosher Salt;
21/2 cup Milk;
3 egg yolks large;
3 oz bittersweet chocolate;
2 tbsp. Butter;
1 tsp. Vanilla extract.
How to cook?
In a medium saucepan, add sugar, cocoa powder, corn-starch and salt. Slowly add milk and whisk it.
Place saucepan over a medium heat and whisk till it comes to a boil for about 6 minutes.
On a heat proof bowl place egg yolks and beat it lightly.
Slowly pour 1/2 cup of hot cocoa mixture. Whisk to combine.
Slowly pour egg mixture back in a sauce pan. Whisk it again.
On a medium heat, whisk the mixture till its thickened to a pudding like consistency for about 3 minutes.
Turn off the heat and whisk in chocolate, butter and vanilla till its smooth. If it gets lumpy, use a fine mesh strainer to strain it.
In a large bowl, place a plastic wrap to the surface of the pudding. Refrigerate for 2 hours.
When ready spoon into individual bowl or ramekins and top it with whipped cream and chocolate shavings.
