This creamy and satisfying healthy peanut butter chicken curry tastes delicious leaving your friends and family members lick fingers and ask for more. This is an Indian and Thai fusion curry recipe.

Ingredients:

1 whole chicken chopped in medium size pieces;

2.5 cups of Curd;

1 cup roasted and skinned peanuts;

3 Medium Onions;

1 cup chopped Coriander;

Large ginger piece;

6-7 Green Chillies;

Salt as per taste.


How to cook?

  • Clean chicken pieces. Marinate it with curd, salt, and black pepper. Set it aside for 1 hour. I normally marinate it one day prior.

  • Make paste of Onion, green chilli, coriander and ginger. Set it aside.

  • Add peanuts in mixer and grind them separately.

  • Sauté the paste in oil. I prefer butter or ghee.

  • When the paste turns golden brown, add the peanut paste and one tablespoon of curd from the marination.

  • Stir it well to make the curry thick.

  • Add chicken pieces. Mix it well.

  • Cover it with lid and let it cook on a medium heat or till chicken turns tender and well cooked.

  • When chicken is cooked add the remaining curd from the marination and bring it to boil. Take off from the heat.

  • Garnish it with Coriander and serve hot with roti, naan or rice.
