
Chicken Papaya

Thanks to Gordan Ramsey for bringing this amazing dish back to our kitchen. A simple chicken curry recipe with papaya and carrot broth. One of the best chicken curry recipes you will ever have!

Ingredients:
250 grams. Green Papaya;
750 grams Chicken legs;
250 grams Carrots;
1/4 cup Oil;
1 cup Onion sliced;
1 tsp Garlic paste;
1 tsp Ginger paste;
1 tsp Red chilli powder;
1/2 tsp Turmeric powder;
1 tsp Coriander powder;
1/2 tsp Raw cumin powder;
1/2 tsp Roasted cumin powder;
1/2 tsp Garam masala powder;
2 stick Cinnamon;
4 pcs Cloves;
2 pcs Bay leaves;
4 pcs Cardamom;
8-10 pcs Black peppercorns;
4 pcs Green chilli;
Salt to taste.
How to cook?
Wash, peel and cut green papaya in small 2-inch size pieces.
Wash, peel and cut carrot in small pieces.
Wash and clean chicken pieces.
Heat the oil in a pan over medium heat, add the chopped onion and sauté until translucent.
Add the raw garam masala; Black pepper, cardamom, cloves and bay leaves, with pieces of chicken. Stir and mix with the spices.
The caramelized onions will flavor the chicken.
Then, add red chilli powder, coriander powder, turmeric powder, raw cumin powder, garlic paste, ginger paste and salt to taste.
Mix everything well and cook over medium-high heat for a few minutes.
Add 1/2 cup of water, close the lid and cook for 5 minutes over high heat (stirring occasionally).
Add the green papaya, carrots and cook again with the lid closed for 5 minutes, stirring occasionally.
Add 1 1/2 cups of water, reduce the heat to medium and cook for 20 minutes with the lid closed.
Remove the cover and check if the vegetables are cooked, if not, you can cook for a few more minutes.
Add the garam masala powder, roasted cumin powder, green chilli.
Remove from heat.
Serve hot with steamed rice!
