Chicken Mapas Recipe is a delicious Kerala style chicken curry with a coconut milk base and a variety of spices. A classic Kerala dish, this robust chicken curry goes well with absolutely anything like appam or even steamed rice.
This recipe is traditionally cooked in a cast iron pan to enjoy the most intense and saturated color that comes out. Easy to prepare and delicious, the Chicken Mapas recipe is perfect for a weekday dinner or a larger weekend brunch.

500 grams Chicken , cut into bite size;
2 sliced Onions;
1 chopped Tomato;
2 slit Green Chillies;
5 cloves of crushed Garlic;
1 inch crushed Ginger;
1 tsp. Red Chilli powder;
1/2 tsp. Turmeric powder;
2 tsp. Coriander Powder;
1/2 tsp. Garam masala powder;
Handful of Curry leaves;
2 cups Coconut milk;
2 tsp. Coconut Oil;
Salt as per taste.
How to cook?
The first step to prepare Chicken Mapas Recipe is to get ready all the ingredients including cleaning and cutting chicken, and chopping veggies.
Heat oil in a cast iron pan/kadai. Add onion, green chilies, curry leaves, ginger, and garlic.
On a medium flame sauté until onions turn golden brown stirring occasionally.
Once the onions are soft and cooked, add red chilli masala powder, turmeric powder, coriander powder, garam masala powder, and tomato. Continue cooking until mixed and cooked well.
Now, add the chicken pieces and sauté till the masala gets mixed well with the chicken evenly.
Add coconut milk mix it well and cover the pan. Continue cooking while occasionally stirring, on a medium heat till the chicken is tender and the gravy thickens.
Garnish it with Coriander leaves and serve it with Appams or Laccha paratha.
