Chicken Mapas Recipe


Chicken Mapas Recipe is a delicious Kerala style chicken curry with a coconut milk base and a variety of spices. A classic Kerala dish, this robust chicken curry goes well with absolutely anything like appam or even steamed rice.


This recipe is traditionally cooked in a cast iron pan to enjoy the most intense and saturated color that comes out. Easy to prepare and delicious, the Chicken Mapas recipe is perfect for a weekday dinner or a larger weekend brunch.

Ingredients:

500 grams Chicken , cut into bite size;

2 sliced Onions;

1 chopped Tomato;

2 slit Green Chillies;

5 cloves of crushed Garlic;

1 inch crushed Ginger;

1 tsp. Red Chilli powder;

1/2 tsp. Turmeric powder;

2 tsp. Coriander Powder;

1/2 tsp. Garam masala powder;

Handful of Curry leaves;

2 cups Coconut milk;

2 tsp. Coconut Oil;

Salt as per taste.


How to cook?

  • The first step to prepare Chicken Mapas Recipe is to get ready all the ingredients including cleaning and cutting chicken, and chopping veggies.

  • Heat oil in a cast iron pan/kadai. Add onion, green chilies, curry leaves, ginger, and garlic.

  • On a medium flame sauté until onions turn golden brown stirring occasionally.

  • Once the onions are soft and cooked, add red chilli masala powder, turmeric powder, coriander powder, garam masala powder, and tomato. Continue cooking until mixed and cooked well.

  • Now, add the chicken pieces and sauté till the masala gets mixed well with the chicken evenly.

  • Add coconut milk mix it well and cover the pan. Continue cooking while occasionally stirring, on a medium heat till the chicken is tender and the gravy thickens.

  • Garnish it with Coriander leaves and serve it with Appams or Laccha paratha.
