Recipe Info:

This recipe is very simple and easy to make. Bhuna is characterised by delicious and thick coating sauce with a perfect balance of spice perfect for a lunch or dinner. Serve it with hot roti, naan or steam rice.


Preparation time: 10 minutes

Cooking time: 50 minutes



6 boneless chicken thighs, cut into pieces;

4 garlic cloves, chopped;

1 green chilli;

2 tbsp. chopped ginger;

2 diced Onions;

1 tsp. Turmeric powder;

2 tsp. Chilli powder;

2 tsp. ground Cumin;

2 tsp. ground Coriander;

1 tsp. Garam masala;

5 chopped Tomatoes;

1/2 tsp. lemon juice;

1 tbsp. Coriander, chopped finely;

3 tbsp Vegetable Oil;

Salt to taste.


How to cook?

  • Heat oil in a large deep pan (or wok). Add garlic, green chillies and Ginger. Mix them well.

  • Add onions. Stir and cook over medium heat for about 5 minutes.

  • Once the onions turn golden brown, add turmeric, chilli, cumin, coriander and garam masala powder and stir well for about a minute.

  • Add tomatoes and pour 100ml of water and add a salt. Mix well and cover the pan till it comes to a boil. Keep stirring occasionally till masala becomes thick.

  • Add the chicken and mix well. Cook over a medium heat with lid covered. Keep stirring occasionally till the chicken is cooked and tendered.

  • Add the lemon juice and garnish it with coriander. Serve hot with naan or roti.
