You may have tasted Butter Chicken but here's another version of Butter Chicken but in the vegetarian way. Loaded with healthy nutrients Cauliflower makes it creamy and mouth watering with the taste just tickling your taste buds for a perfect lunch or dinner.
Preparation time: 10 minutes.
Cooking Time: 20 minutes.
Total time: 30 minutes.
1 Cup Basmati Rice;
3 tbsp. Butter, Unsalted preferred;
3 cloves minced garlic;
1 medium onion diced;
1 tbsp. Ginger, grated;
2 tsp. Garam masala;
1 tsp Chili powder;
1 tsp. Cumin grounded;
1/4 cup Tomato paste;
4 cups water(2 cup for rice + 2 cup for cooking cauliflower);
Salt as per taste;
Fresh ground black pepper as per taste;
1 head Cauliflower, cut in florets;
1/2 cup fresh cream;
1/4 cup chopped Coriander leaves.
How to cook:
In a large pan, add 2 cups of water, cook rice. Make sure doesn't get sticky.
Add bit a oil, melt butter in a separate pan or if you are cooking in oven dutch it over medium heat.
Now add onions and garlic. Saute it till the onions become translucent for about 2-3 minutes.
Add ginger, garam masala, chilli powder, cumin and tomato paste until fragrant for about 1 minute.
Add water and salt, pepper to taste. Boil it. Then reduce the heat to simmer and keep stirring occasionally until reduced and becomes thick for about 5-7 minutes.
Add Cauliflower until tender for 8-10 minutes.
Add fresh cream and stir for about 1 minute.
That's set! serve it hot and season it with Coriander.
I would recommend you boil cauliflower first adding little turmeric and pinch of salt for better taste and reduce raw smell.
