Aamras Ki Kadhi is a delicious Gujarati Kadhi that uses mango juice. This gives it a nice tangy taste and is perfect recipe in the summer. It is served with Aloo Shaak, Methi Thepla, and Steamed Rice for a comforting weeknight lunch or dinner.
Aamras Ki Kadhi is a traditional spicy and sweet Gujarati recipe that combines sweet and sour mango juice with a few other ingredients. Perfect for summer afternoon lunches, or serve with rice or roti for a lunch pack on any hot day of the year. It is no longer difficult to obtain ripe mango foods. Simply combine some sweet mango pulp with chick pea flour to make this Gujarati variation.

1 cup Mango Puree (Aamras);
1/4 cup Curd (Yogurt);
2 tbsp. Besan (Gram flour);
1/4 tsp. Turmeric Powder;
3 cups Water;
2 Dry red chilies;
1/4 tsp. Asafoetida (hing);
1/4 tsp. Cumin seeds;
1 inch finely chopped Ginger;
1 sprig of Curry Leaves;
2 tbsp. Ghee;
Salt as per taste.
How to cook?
To begin making the Aamras Ki Kadhi, in a medium mixing bowl, combine the aamras, curd, besan, turmeric powder, and water to make a fine paste with no lumps.
Pour the Aamras mixture into a saucepan, add the salt, and whisk constantly until the aamras kadhi thickens. It is essential to continue whisking until the kadhi thickens to avoid lump formation.
For a couple of minutes, bring the Aamras Kadhi to a boil. After that, reduce the heat to low and continue to cook for 10 minutes to allow all of the flavours to blend.
In a tadka pan over medium heat, melt the ghee and add the cumin seeds, dry red chilli, and curry leaves. Allow the mustard seeds to crackle for a few seconds.
When it starts to crackle, add the chopped ginger, red chilli powder, and asafoetida and cook for a few seconds.
Pour the tadka over the Aamras Kadhi and quickly stir it in.
To taste, check the salt and adjust as needed. Turn off the heat and transfer the Aamras Kadhi to a serving bowl. Serve immediately.
